This specialty lot is grown in the fertile volcanic loam soils of the Kintamani Highlands at elevations ranging from 1,200 to 1,600 meters. The smallholder farmers are organized through the Subak Abian—a traditional, centuries-old cooperative farming structure founded on the Hindu philosophy of Tri Hita Karana (focusing on the harmony between people, the environment, and God).
True to classic Indonesian processing, the cherries are hand-picked and undergo a traditional wet-hulling process (Giling Basah) before being slow-dried in two steps on raised beds. This technique strips the parchment layer while the beans are still high in moisture, yielding an iconic bluish hue and imparting an incredibly heavy, syrupy body with minimized acidity.
Our medium-dark roast masterfully balances that untamed Indonesian body with high-altitude clarity. Every sip hits the palate with the bittersweet indulgence of dark baker's chocolate and rich brown sugar, brightened up with an aromatic splash of orange peel and a uniquely wild, botanical note of juniper. It all culminates in a finish that is remarkably crisp, pristine, and clean.
