Cultivated at elevations of 950 to 1,100 meters in nutrient-dense volcanic loam soil, the cherries undergo a traditional pulped natural process and are dried under the warm Brazilian sun. This technique allows the beans to absorb the mucilage's natural sugars, yielding a cup packed with raw sweetness and a smooth body.
Graded at SSFC 17/18, this indicates that the beans are "Strictly Soft Fine Cup"—meaning they are completely free of harsh off-flavors—and sorted to a large, highly consistent screen size to ensure a flawless, even roast.
