Cultivated at breathtaking altitudes between 1,400 and 1,900 meters, this coffee is grown by passionate smallholder coffee growers from Chiapas and Oaxaca. The lot combines an impressive range of traditional heirloom varieties, including Typica, Criollo, Bourbon, Mundo Novo, and Caturra. Thriving in nutrient-dense clay mineral soils, these beans are fully washed and sun-dried to produce an incredibly clean, balanced cup.
Our medium roast perfectly captures the regional charm of southern Mexico. It leads with a warm, inviting foundation of smooth chocolate, sprinkled with a touch of aromatic cinnamon. This comforting base is beautifully balanced by a crisp, refreshing pop of sweet green apple on the finish.
